Formación educativa en emprendimiento gastronómico con perspectiva ética: revisión bibliográfica de programas dirigidos a microempresarios en América Latina

Abstract
El presente artículo realiza una revisión bibliográfica crítica sobre los programas de formación educativa en emprendimiento gastronómico implementados en América Latina, con un enfoque centrado en la perspectiva ética. Se analizan diversas fuentes académicas y documentos institucionales que abordan el diseño, objetivos y resultados de iniciativas dirigidas a microempresarios del sector gastronómico, en especial aquellos provenientes de contextos vulnerables o en situación de informalidad. El estudio identifica una tendencia creciente hacia la incorporación de valores éticos y sostenibilidad en los programas de capacitación, sin embargo, también revela brechas significativas en la articulación de políticas públicas, acceso equitativo a la formación y evaluación de impacto social. Se concluye que es fundamental diseñar propuestas educativas integrales que promuevan no solo el desarrollo de competencias empresariales y culinarias, sino también la conciencia ética y social del emprendedor como agente transformador en su comunidad.
